Low Sugar Recipes!! Summer TIME!!


Yes, summer is coming to an end, but I thought it would be nice to keep it around a little longer with a delicious popsicle recipe!! Let the kids run around outside and cool down with a popsicle that isn't loaded full of artificial sugars. The ingredients are very very simple. It only takes about 10 minutes to prepare and this recipe makes 8 popsicles:

To start you need to pick a fruit, I did it simple and used 2 cups of blueberries.You can use something different like raspberries or strawberries. You need to either chop up into small pieces or puree them in a blender or food processor. The next part is optional, but it does give it a little bit more flavor, and it is to use mint leaves. You will need 15 to 20 leaves depending on how strong you want the mint flavor to be. Next you need to mix in 1 and a half cups of coconut water. (Feel free to use the coconut water with pineapple added!). Lastly, you need 2 tablespoons of raw honey! Mix everything in a bowl and transfer to popsicle trays. Freeze them and you're done!! Very easy and a healthy snack!!

I personally did not mix in the mint leaves. I put one or 2 in each popsicle mold.
